A Family Favourite

'Anonymous' left a comment on my flea finds post below, asking for my recipe for coffee and walnut cake. I'm guessing it was aimed at my 'wonky cake' that I made for my daughter's wedding back in 2012! 

The recipe I used was from this wonderful little book, written by the WI, complied by Jessica Simmons.
Here's the recipe, which I decorated differently with coffee flavoured butter cream icing and chopped walnuts (click on the photos to enlarge the text if necessary.)


 
As an alternative, make a basic Victoria sponge and add 1 teaspoon of coffee essence (or coffee water made from instant coffee), plus 60g (2oz) chopped walnuts to the mixture before cooking.)
